Red Velvet Double Doozies


These red velvet cookies are extremely easy and extremely good! They're also made from scratch. If you want to call them chocolate double doozies, you can, because red velvet is just chocolate dyed red. :)




Ingredients:

(cookies)
  • 1 1/2 cup flour
  • 2 tbsp cocoa powder
  • 1 tsp baking soda
  • 1/4 tsp baking powder
  • 1/4 tsp salt
  • 1 cup sugar
  • 1/2 cup softened butter (1 stick)
  • 1 egg
  • Liquid red food coloring
(icing)
  • 2 cups powdered sugar
  • 1/4 cup softened butter
  • 1 tbsp hot water
  • 1/2 tsp vanilla extract





  1. Preheat oven to 350 degrees. Whisk together flour, cocoa powder, baking soda, baking powder, and salt in a bowl. 
  2. Beat butter and sugar together with an electric mixer in a separate bowl until fluffy. Next, mix in egg and food coloring.
  3. On low speed, add dry ingredients and mix to combine. Roll the dough into balls and place them on a prepared cookie/baking sheet. Use the bottom of a measuring cup and flatten the balls of dough slightly. Bake for about 8 minutes (until the edges start turning brown). 
  4. Let them cool while you make the icing. First, beat together powdered sugar, butter, water, and vanilla until fluffy and light. Put the icing in an icing bag or a zip lock bag will also work (that's what i used). Turn half of the cookies over and pipe icing onto them. Place another cookie on top to make a sandwich and start munching!
